Gluten Free Summer Local Blueberry Breakfast Bread!

Local Blueberry Breakfast Bread is the way to go in the mornings! We adore this recipe in the summer especially when the markets are full of fresh local blueberries. This bread is gluten free, high in protein and packed with sweet juicy blueberries! Blueberries are packed with fiber, potassium, folate, vitamin C, vitamin B6 and phytonutrient content, coupled with its lack of cholesterol, all support heart health. The fiber in blueberries helps lower the total amount of cholesterol in the blood and decrease the risk of heart disease. 

What you’ll need:

-4 eggs
-2 tablespoons of melted coconut oil or butter
-2 tablespoons of maple syrup
-1/2 teaspoon of vanilla extract 
-1 tablespoon of apple cider vinegar or lemon juice
-pinch of sea salt 
-4 tablespoons of coconut flour 
-1 teaspoon of baking soda
-2 teaspoons of cinnamon 
-1 full cup of blueberries (or more!) 

How to make it:

-Preheat your oven to 425F and line a 5×9 inch baking pan with parchment paper. (We use all natural unbleached parchment paper from Tara foods)

-Add all of the ingredients except the blueberries to a big bowl and mix well. It helps to beat the eggs –first with the rest of the wet ingredients and then add the coconut flour and baking soda.

-Fold in the blueberries

-Add the batter to your pan and bake for 25 minutes 

-Enjoy this bread on its on or top it with almond butter and extra blueberries!
