Heres what you need:
1+1/2 cups of quinoa soaked over night in double the water
1 medium zucchini grated
1+1/2 tablespoons of chia seeds
1+1/2 table spoons of apple cider vinegar
1 teaspoon of baking soda
1 teaspoon of sea salt
2 tablespoons of fennel seeds for a more herby flavour (optional)
2 tablespoons of melted coconut oil
5×9 inch baking pan
Heres how to make it:
Get your ingredients ready the night before. Soak the quinoa is twice the amount of water and leave out in a bowl overnight. Grate the zucchini and place in a bowl with the chia seeds in the fridge overnight.
The next morning turn your oven on at 350f, line the baking pan with parchment paper. Drain and rinse the soaked quinoa and add all ingredients to your food processor. Blend on high for two minutes and then spoon it into the pan. Bake for an hour and 15 minutes and let it cool for an hour.
